Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

4 large whole wheat tortillas or wraps

1 cup fresh lettuce or spinach leaves

1/2 cup plain Greek yogurt or a plant-based yogurt alternative

1/4 teaspoon cayenne pepper (optional, for added spice)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C), ensuring it reaches the proper temperature before roasting the chickpeas.

Prepare the Chickpeas: On a parchment-lined baking sheet, arrange the drained and rinsed chickpeas in a single layer. Drizzle the chickpeas with olive oil and sprinkle with smoked paprika, garlic powder, ground cumin, salt, and black pepper. Toss the chickpeas thoroughly to ensure they are evenly coated with the spices. Spread them out again into a single layer for even roasting.

Roast the Chickpeas: Place the baking sheet in the preheated oven and roast the chickpeas for approximately 25-30 minutes. About halfway through, shake the pan to ensure the chickpeas brown evenly and achieve that perfect crispy texture.

Mix the Tomato Filling: While the chickpeas are roasting, prepare the fresh tomato filling. In a large mixing bowl, combine the halved cherry tomatoes, finely diced red onion, chopped cilantro, and lime juice. Season the mixture with salt and pepper to taste. Gently toss to combine all the ingredients, then set aside to allow the flavors to meld.

Prepare the Wraps: Once the chickpeas are golden brown and crispy, carefully remove them from the oven and let them cool for a few minutes. This will help them retain their crunch when added to the wraps.

Assemble the Wraps: On each whole wheat tortilla, layer a generous handful of fresh lettuce or spinach leaves as the base. Spoon a good amount of the prepared tomato filling onto the greens, then top with a scattering of crispy chickpeas. If you enjoy a little kick, consider adding a pinch of cayenne pepper on top.

Add Yogurt: Drizzle or dollop a portion of Greek yogurt over the filling to introduce a creamy and tangy flavor. You can also add extra chopped cilantro for an additional burst of freshness.

Wrap It Up: To form the wraps, carefully fold in the sides of each tortilla, then roll from the bottom upwards to enclose all the delicious filling securely.

Serve: Cut each wrap in half diagonally for a visually appealing presentation. Serve immediately for the best texture, or wrap in foil for a tasty and convenient meal on the go.
