8 small corn tortillas

1 cup thinly sliced salami

1 cup thinly sliced prosciutto

1 cup sliced smoked gouda cheese

1 cup sliced aged cheddar cheese

½ cup mixed olives (green, kalamata, and Castelvetrano), pitted and halved

½ cup cherry tomatoes, halved

¼ cup fresh arugula

¼ cup roasted red peppers, sliced

1 avocado, sliced

¼ cup fresh herbs (such as basil, parsley, or chives), finely chopped

2 tablespoons olive oil

Sea salt and freshly cracked black pepper, to taste

Optional: Hot honey for drizzling

Prepare the Tacos: Begin by heating a skillet over medium heat. While it warms, lightly brush both sides of each corn tortilla with olive oil. Once the skillet is sufficiently hot, place one tortilla in the pan and cook for approximately 30 seconds on each side, or until the tortilla is slightly golden and crispy. Remove the tortilla and place it on a plate. Repeat this process with the remaining tortillas, keeping them warm.

    Layer the Ingredients: Once the tortillas are crispy, begin assembling your tacos. On each tortilla, start with a slice of salami, followed by a layer of prosciutto. Next, add a slice of smoked gouda and then a slice of aged cheddar.
