1 cup full-fat canned coconut milk (for a richer texture)

1/2 cup nutritional yeast

2 cloves garlic, finely minced

1 medium onion, finely diced

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon salt (or to taste)

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional, for a hint of spice)

Fresh basil leaves for garnish

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the whole grain pasta and cook according to the package instructions until it reaches an al dente texture. Before draining, reserve 1/2 cup of the pasta cooking water, then drain the rest.

    Sauté the Aromatics: In a spacious skillet, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 5 minutes, stirring occasionally, until the onion becomes soft and translucent. Next, add the minced garlic and sauté for an additional 1-2 minutes, just until fragrant.

      Add Spinach: Gradually incorporate the fresh spinach into the skillet. Stir and let it cook down until wilted, which should take about 3-4 minutes.

        Prepare the Creamy Sauce: Pour in the canned coconut milk and stir well to combine with the sautéed ingredients.
