Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup plain Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

Skewers (if using wooden skewers, soak in water for 30 minutes to prevent burning)

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, lemon juice, smoked paprika, salt, and black pepper. Add the cubed chicken to the bowl, tossing gently until each piece is well coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to overnight for a more intense flavor).

Prepare the Tzatziki Sauce: While the chicken marinates, prepare the tzatziki. In a separate bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, and a pinch of salt. Mix well until all ingredients are evenly combined. Taste and adjust the seasoning if necessary. Cover and refrigerate the tzatziki until you're ready to serve.

Skewering the Chicken: Preheat your grill or grill pan to medium-high heat. Carefully thread the marinated chicken cubes onto the skewers, making sure to leave a little space between each piece for even cooking.

Grill the Skewers: Place the chicken skewers on the hot grill. Cook for about 12-15 minutes, turning the skewers occasionally to create a nice char, until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C).

Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Serve the skewers warm with a generous side of creamy tzatziki for dipping.

Enjoy: These flavorful skewers are best enjoyed with warm pita bread, crunchy fresh veggies, and an optional sprinkle of extra dill for garnish!
