Ingredients

20 oz refrigerated cheese tortellini

2 tablespoons extra-virgin olive oil

3 cloves garlic, minced

1 medium onion, diced

1 (28 oz) can crushed tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional, for heat)

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C), ensuring it's nice and hot before you put your bake in.

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Add the tortellini and cook according to the package instructions, typically about 3-5 minutes, until they are al dente. Once cooked, drain the tortellini thoroughly and set aside.

Sauté Aromatics: In a large skillet, heat the extra-virgin olive oil over medium heat. Add the diced onion and sauté until it becomes translucent and soft, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until it becomes fragrant and golden.

Prepare the Sauce: Pour in the crushed tomatoes, followed by the dried basil, dried oregano, and crushed red pepper flakes (if you’re using them for a bit of spice). Stir well to combine, and allow the mixture to simmer for about 5-7 minutes. Taste and adjust seasoning with salt and pepper.

Make it Creamy: Lower the heat to a gentle simmer and stir in the heavy cream. Mix well until the sauce is smooth and creamy. Gently add the cooked tortellini to the skillet, folding them into the sauce to ensure each piece is well coated.

Assemble the Bake: Carefully transfer the creamy tortellini mixture into a greased 9x13 inch baking dish. Evenly sprinkle the shredded mozzarella and grated Parmesan cheese over the top, creating a beautiful layer of cheesy goodness.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and lightly golden brown on top.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a few minutes before serving. Garnish with fresh basil leaves for a pop of color and flavor. Enjoy the rich and creamy delight of your cheesy bake!
