4 cups fresh baby spinach

Cook the Pasta: In a large pot, bring water generously seasoned with salt to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente, typically about 11-13 minutes. Before draining, reserve ½ cup of the pasta cooking water for later use. Drain the pasta and set it aside.
