4 cups low-sodium vegetable broth, kept warm

1 can (14.5 oz) crushed tomatoes (preferably San Marzano)

1 small onion, finely diced

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese (plus extra for serving)

1/4 cup heavy cream

1 cup fresh basil leaves, chopped (plus extra for garnish)

2 tablespoons olive oil

Heat the Oil: In a large skillet or saucepan, warm the olive oil over medium heat. Add the finely diced onion and sauté for about 3-4 minutes until it becomes soft and translucent, releasing its natural sweetness.

    Add Garlic: Incorporate the minced garlic into the pan and stir for an additional minute, cooking until fragrant. Keep an eye on it to prevent burning, as garlic can cook quickly.

      Toast the Rice: Add the Arborio rice to the skillet, stirring constantly for about 2 minutes. This will help to lightly toast the rice and coat each grain in the aromatic oil, enhancing its flavor.

        Deglaze with Wine: If using, pour in the dry white wine and let it simmer until it has mostly evaporated and is absorbed by the rice. Stir frequently during this process to add richness to the dish. If you prefer not to use wine, skip this step.
