12 oz fettuccine or pasta of your choice

2 tablespoons olive oil

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 teaspoon granulated sugar

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, adjust for spice preference)

Salt and freshly ground black pepper, to taste

1 cup heavy cream

1 cup fresh basil leaves, torn or roughly chopped

1/2 cup grated Parmesan cheese, plus extra for serving

Extra basil leaves for garnish

Cook the Pasta:

    In a large pot, bring water to a rolling boil and generously salt it. Add the fettuccine, cooking per package instructions until al dente (usually around 8-10 minutes). Once cooked, reserve about 1 cup of pasta water, then drain the remainder and set the pasta aside in a large bowl.

      Prepare the Sauce:

        In a spacious skillet, heat the olive oil over medium heat. Once the oil shimmers, add the minced garlic. Sauté for approximately 30 seconds, stirring continuously until fragrant, being careful not to let it brown.

          Add Tomatoes and Season:

            Carefully pour in the crushed tomatoes. Stir in the granulated sugar, dried oregano, and red pepper flakes (if using), along with a pinch of salt and freshly ground black pepper. Bring the mixture to a gentle simmer and allow it to cook for about 10 minutes, stirring occasionally, so the flavors meld and the sauce thickens slightly.
