Creamy Tikka Masala Chickpeas

2 cups canned chickpeas, drained and rinsed

1 tablespoon vegetable oil

1 large onion, finely chopped

3 cloves garlic, minced

1 inch fresh ginger, grated

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

½ teaspoon ground turmeric

1 can (14 oz) diced tomatoes, with juices

1 cup coconut milk

1 tablespoon tomato paste

Salt, to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large skillet, heat the vegetable oil over medium heat. Once hot, add the finely chopped onions. Cook, stirring occasionally, until the onions become translucent, about 5 minutes. Then, stir in the minced garlic and grated ginger. Sauté for an additional minute until fragrant.

    Add Spices: Sprinkle the garam masala, ground cumin, ground coriander, smoked paprika, and ground turmeric into the skillet with the onion mixture. Stir well to combine, allowing the spices to toast for 1-2 minutes until their aromas are released.

      Incorporate Tomatoes: Pour in the diced tomatoes along with their juices, then add the tomato paste. Stir thoroughly to integrate all the ingredients and let the mixture simmer for about 5 minutes, enabling the flavors to meld beautifully.

        Mix in Chickpeas: Add the rinsed chickpeas to the skillet, ensuring they are well-coated with the aromatic spice mixture. Stir gently to combine.
