Creamy Sweet Potato Mac & Cheese

2 medium sweet potatoes, peeled and cut into 1-inch cubes

8 oz elbow macaroni (or pasta of your choice)

1 cup milk (you can use whole, almond, or oat milk for a dairy-free option)

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/4 cup cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon ground nutmeg

Salt and freshly ground pepper, to taste

1/2 cup breadcrumbs (panko is highly recommended for a crunchy topping)

2 tablespoons olive oil or melted butter

Fresh parsley or chives, chopped, for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: In a medium pot, bring salted water to a rolling boil. Carefully add the cubed sweet potatoes and cook for about 10-15 minutes, or until they are fork-tender. Drain the cooked sweet potatoes and return them to the pot. Use a potato masher or fork to mash the sweet potatoes until smooth and creamy. Set aside.

    Cook the Pasta: In the same pot, bring fresh salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and return it to the pot, ensuring it's well-drained.

      Make the Cheese Sauce: In a separate medium saucepan over medium heat, combine the milk, mashed sweet potatoes, garlic powder, onion powder, ground nutmeg, and a good pinch of salt and pepper. Stir the mixture until well combined and heated through, making sure it does not come to a boil to prevent scorching.

        Add the Cheese: Remove the saucepan from the heat and gradually stir in the grated cheddar cheese, mozzarella cheese, and cream cheese. Continue stirring until all the cheeses have melted and the sauce is smooth and creamy.

          Combine: Pour the luscious cheese sauce over the cooked pasta and gently stir until all the pasta is thoroughly coated in the cheese mixture. Taste and adjust seasoning with more salt and pepper, if needed.

            Prepare the Topping: In a small bowl, mix the breadcrumbs with olive oil or melted butter, adding a pinch of salt and pepper for extra flavor. This will create a tasty, crunchy topping.

              Bake: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish, spreading it out evenly. Generously sprinkle the breadcrumb mixture over the top. Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and crisp.
