Creamy Spinach Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1/2 cup cream cheese, softened to room temperature

1/2 cup shredded mozzarella cheese, divided

2 cloves garlic, minced

1/4 teaspoon freshly grated nutmeg

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

2 tablespoons grated Parmesan cheese

Fresh parsley, chopped, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This allows it to reach the right temperature for baking your sweet potatoes.

    Bake Sweet Potatoes: Rinse the sweet potatoes under cold water, scrubbing off any dirt. Use a fork to poke several holes in each potato; this prevents them from bursting while cooking. Arrange the potatoes on a baking sheet and bake for approximately 45-50 minutes, or until they are tender when pierced with a fork.

      Sauté Spinach: In the meantime, heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, stirring frequently until fragrant. Next, add the chopped spinach, cooking for about 3-4 minutes, or until it has wilted down. Season the mixture with salt, pepper, and nutmeg to elevate the flavor.

        Prepare the Creamy Mixture: In a mixing bowl, combine the sautéed spinach, ricotta cheese, softened cream cheese, and half of the shredded mozzarella cheese. Stir together until the mixture is smooth and creamy. Taste and adjust the seasoning with additional salt and pepper as necessary.

          Stuff Sweet Potatoes: Once the sweet potatoes are fully roasted, take them out of the oven and allow them to cool for a few minutes. Carefully slice each potato lengthwise down the center, creating a pocket for the filling. Gently scoop out a portion of the sweet potato flesh with a spoon, ensuring the skin remains intact. Add the scooped-out flesh to the creamy spinach mixture and stir until combined.

            Fill Potatoes: Generously spoon the creamy spinach filling back into the sweet potato skins, ensuring an even distribution. Top each potato with the remaining mozzarella cheese and a sprinkle of grated Parmesan for a delightful crispy finish.
