Creamy Spinach Pasta Skillet

8 oz. fettuccine or your preferred pasta

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 medium onion, diced

4 cups fresh spinach, tightly packed

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

1/2 teaspoon red pepper flakes (optional for a kick)

Salt and black pepper to taste

1/2 cup sun-dried tomatoes, roughly chopped

Fresh basil leaves, for garnish (optional)

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Remember to reserve about 1 cup of the pasta cooking water before draining the rest. Set the drained pasta aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once shimmering, add the diced onion and sauté for 3-4 minutes until it becomes translucent. Then, stir in the minced garlic and continue to sauté for an additional 1-2 minutes until fragrant, being careful not to let it burn.

      Incorporate Spinach: Gradually add the fresh spinach to the skillet, stirring continuously. Sauté for around 2-3 minutes, or until the spinach is wilted and reduced in volume.

        Create the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream, stirring to combine. Allow the mixture to simmer gently for a couple of minutes, thickening slightly.

          Enhance the Flavor: Stir in the grated Parmesan cheese alongside the Italian seasoning, and add red pepper flakes if desired. Season with salt and black pepper to taste. Mix well until the cheese melts and the sauce becomes smooth and creamy.

            Combine with Pasta: Add the cooked fettuccine to the skillet, tossing it in the creamy spinach sauce until well coated. If the sauce appears too thick, gradually stir in the reserved pasta water until you achieve your ideal consistency.

              Add Sun-Dried Tomatoes: Gently fold the chopped sun-dried tomatoes into the pasta mixture, allowing them to warm through for about 1-2 minutes.

                Serve: Once everything is well-combined and heated, remove the skillet from the heat. Serve the dish hot, garnished with fresh basil leaves for an aromatic touch if desired.
