Ingredients

1 medium spaghetti squash

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

1/4 cup fresh basil leaves, chopped (for garnish)

Olive oil, for drizzling

Instructions

Prepare the Spaghetti Squash:

    - Begin by preheating your oven to 400°F (200°C).

      - Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds using a spoon. Drizzle the cut sides with olive oil and season with salt and pepper. Place the squash halves cut-side down on a baking sheet lined with parchment paper.

        - Roast the squash in the preheated oven for about 40-50 minutes. The flesh should be tender and easily shreds into strands with a fork once cooked. After roasting, remove from the oven and allow it to cool for a few minutes.

          Sauté the Spinach and Garlic:

            - While the squash is roasting, heat a drizzle of olive oil in a skillet over medium heat. Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.

              - Add the chopped spinach to the skillet and cook until wilted, which should take about 3-4 minutes. Once done, remove from heat and allow the mixture to cool slightly.

                Prepare the Cheese Mixture:

                  - In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, graded Parmesan cheese, the egg, Italian seasoning, and red pepper flakes (if using). Season with salt and pepper. Mix thoroughly until you have a smooth and creamy consistency.

                    Combine Ingredients:

                      - Once the spaghetti squash has cooled enough to handle, use a fork to shred the flesh into long strands. Add the shredded strands into the bowl with the cheese mixture, followed by the sautéed spinach and garlic. Stir gently until all ingredients are evenly incorporated.

                        Assemble the Bake:

                          - Transfer the combined mixture into a lightly greased baking dish (approximately 8x8 inches). Spread the mixture evenly in the dish and sprinkle the remaining shredded mozzarella cheese on top.

                            Bake:

                              - Place the baking dish into the oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and the top has developed a light golden color.

                                Serve:

                                  - After baking, remove the dish from the oven and allow it to sit for about 5 minutes before slicing. Garnish with chopped fresh basil for an extra pop of flavor and a touch of color.
