4 cloves of garlic, minced

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

1 cup heavy cream

½ cup grated Parmesan cheese, plus more for serving

12 oz spaghetti or any pasta of your choice

Fresh basil leaves, for garnish

Preheat the Oven: Start by preheating your oven to 400°F (200°C) so it reaches the ideal temperature while you prepare the rest of the dish.

    Roast the Tomatoes: On a large baking sheet, combine the cherry tomatoes with olive oil, a generous sprinkle of salt, freshly cracked pepper, minced garlic, dried oregano, and red pepper flakes if you're using them. Toss everything together until the tomatoes are well coated. Spread them out in a single layer and place in the preheated oven. Roast for 25-30 minutes, or until the tomatoes are blistered and caramelized, releasing their sweet juices.

      Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Once done, drain the pasta but reserve about 1 cup of the pasta cooking water for later use.
