Creamy Roasted Garlic Hummus

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tablespoons fresh lemon juice

3 tablespoons olive oil, plus more for drizzling

1 teaspoon ground cumin

1/2 teaspoon smoked paprika, plus extra for garnish

Salt and pepper, to taste

3-4 tablespoons water (or more for desired consistency)

Fresh parsley, chopped (for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut off the top quarter of the garlic head to expose the individual cloves. Drizzle one teaspoon of olive oil over the exposed garlic and wrap the entire head in aluminum foil. Roast in the preheated oven for about 30-35 minutes, until the cloves are soft and caramelized. Once done, remove from the oven and let cool for a few minutes. Gently squeeze the roasted garlic cloves from their skins and set them aside.

    Combine Ingredients: In a food processor, add the roasted garlic, chickpeas, tahini, fresh lemon juice, olive oil, ground cumin, smoked paprika, salt, and pepper.

      Blend Until Smooth: Pulse the food processor until all ingredients are well incorporated and the mixture becomes creamy. If the hummus appears too thick, slowly add water—one tablespoon at a time—until you achieve your preferred consistency.

        Taste and Adjust: Stop the processor and taste the hummus. Adjust the seasoning to your liking by adding more salt, lemon juice, or spices as needed.
