Ingredients

1 cup pure pumpkin puree (canned or fresh)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, finely minced

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

Salt and freshly cracked black pepper to taste

1 pound fettuccine pasta

Fresh sage leaves for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente, usually around 8-10 minutes. Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set it aside.

Make the Sauce Base: In a large skillet set over medium heat, melt the unsalted butter until it begins to bubble. Add the finely minced garlic to the skillet and sauté for about 1 minute, stirring frequently, until the garlic is fragrant but not browned.

Incorporate Pumpkin and Cream: Stir the pumpkin puree into the skillet, blending it smoothly with the garlic and butter. Gradually pour in the heavy cream while stirring continuously to create a uniform mixture.

Season the Sauce: Lower the heat to a gentle simmer. Add the freshly grated Parmesan cheese, ground nutmeg, and ground cinnamon to the sauce. Allow the mixture to simmer for 3-4 minutes, stirring occasionally, until it thickens slightly. Taste and season with salt and freshly cracked black pepper as desired.

Combine Pasta and Sauce: Carefully add the cooked fettuccine to the skillet with the creamy pumpkin Alfredo sauce. Gently toss the pasta to ensure it's evenly coated in the rich sauce. If the sauce appears too thick, gradually stir in small amounts of the reserved pasta water until you reach your preferred consistency.

Serve and Garnish: Plate the creamy pumpkin Alfredo pasta into serving bowls. For an elegant touch, garnish each dish with a few fresh sage leaves.
