Creamy Peanut Sesame Noodles

8 oz (225g) spaghetti or rice noodles

1/4 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons sesame oil

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1-2 garlic cloves, minced

1 teaspoon grated fresh ginger

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

1 cup snow peas, trimmed

1 cup carrots, julienned

1/4 cup green onions, chopped

2 tablespoons sesame seeds, toasted

Fresh cilantro for garnish (optional)

Cook the Noodles: In a large pot, bring salted water to a rolling boil. Add your choice of spaghetti or rice noodles and cook according to the package instructions until they are al dente. Once cooked, drain the noodles and give them a quick rinse under cold water to halt the cooking process. Set them aside for later use.

    Prepare the Sauce: In a medium-sized mixing bowl, combine the creamy peanut butter, soy sauce, sesame oil, rice vinegar, honey (or maple syrup), minced garlic, grated ginger, and red pepper flakes. Whisk these ingredients together until the mixture is smooth and well blended. This will be your delectable sauce!

      Sauté the Vegetables: Heat a large skillet over medium heat and add a splash of water or a teaspoon of oil. Once hot, add the trimmed snow peas and julienned carrots to the skillet.
