1 medium cauliflower, chopped into florets

2 cups fresh spinach, thoroughly washed and dried

1 medium onion, diced fine

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for extra richness)

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 fresh lemon

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onions and sauté until they become translucent, about 5 minutes. Add the minced garlic, stirring for an additional 1-2 minutes, until the garlic is aromatic and lightly golden.

    Cook the Cauliflower: Introduce the cauliflower florets to the pot, stirring them in with the onion and garlic mixture for about a minute. Sprinkle in the ground cumin and smoked paprika, ensuring that the cauliflower is evenly coated with the spices.

      Add the Broth: Pour in the vegetable broth and raise the heat to bring the mixture to a boil. Once boiling, lower the heat to a simmer and let it cook for about 10-12 minutes or until the cauliflower florets are tender when pierced with a fork.

        Blend the Soup: Remove the pot from the heat. Using an immersion blender, blend the soup until it reaches a silky smooth consistency. If you don't have an immersion blender, carefully transfer batches of the soup to a standard blender, blending until smooth, and then return it to the pot.

          Incorporate Spinach and Cream: Stir in the fresh spinach and coconut milk, and cook over low heat for an additional 3-5 minutes until the spinach is wilted and the soup is warmed through.
