1 cup couscous

1 1/4 cups vegetable broth

1/2 cup cream cheese, softened

1/4 cup plain Greek yogurt

Zest and juice of 1 lemon

1/4 cup fresh parsley, finely chopped

1/4 cup fresh dill, chopped

1/4 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1/2 cup cherry tomatoes, halved (for garnish)

Olive oil, for drizzling

Optional: 1/4 cup toasted pine nuts or slivered almonds (for garnish)

Instructions
 

Prepare the Couscous:

    In a medium saucepan, bring the vegetable broth to a rolling boil. Once boiling, remove the saucepan from the heat and stir in the couscous. Quickly cover the pan with a lid and let it sit for about 5 minutes, allowing the couscous to absorb the liquid and become tender and fluffy.

      Mix the Creamy Base:

        In a separate mixing bowl, combine the softened cream cheese, Greek yogurt, lemon zest, lemon juice, garlic powder, and a pinch of salt and pepper. Use a hand mixer or a sturdy whisk to blend the ingredients until the mixture is creamy and smooth.
