3 cups vegetable broth

1 cup heavy cream (or substitute with coconut cream for a dairy-free version)

1 tablespoon honey or maple syrup, adjust to your preferred sweetness level

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Sea salt and freshly cracked black pepper, to taste

1 tablespoon freshly squeezed lemon juice

Crumbled feta or goat cheese (optional, for garnish)

Chopped fresh herbs such as basil or mint for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the finely chopped onion along with the minced garlic. Sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

    Cook the Figs: Stir in the chopped figs, mixing well with the onions and garlic. Continue to cook for another 3-4 minutes, letting the figs soften and their natural sweetness begin to release.

      Add the Broth: Pour in the vegetable broth, making sure all the ingredients are submerged. Increase the heat to bring the mixture to a gentle simmer. Let it cook uncovered for about 15 minutes, allowing the figs to break down and infuse their flavors into the broth.

        Blend the Soup: After simmering, remove the pot from heat. Using an immersion blender, puree the soup until it reaches a smooth and creamy consistency. If you don’t have an immersion blender, carefully transfer the mixture in batches to a regular blender and blend until smooth.
