2 cups penne pasta

2 tablespoons olive oil

1 pound (450g) chicken breast, diced into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning blend

1/2 teaspoon red pepper flakes (optional for a spicy kick)

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus additional for topping

1 1/2 cups shredded mozzarella cheese

Salt and black pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta and set it aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt, black pepper, Italian seasoning, and red pepper flakes if desired. Cook the chicken for about 5-7 minutes, stirring occasionally, until it's evenly browned and fully cooked. Once done, remove the chicken from the skillet and set it aside.

        Cook the Spinach and Garlic: In the same skillet, add the minced garlic and sauté for approximately 30 seconds, or until fragrant. Next, add the chopped spinach and cook for 2-3 minutes, stirring frequently until the spinach is wilted. Remove from heat and set aside.

          Prepare the Creamy Sauce: In a large mixing bowl, combine the ricotta cheese, heavy cream, and grated Parmesan cheese. Mix until the mixture is smooth and well combined. Season with a pinch of salt and black pepper to taste.
