2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and freshly cracked black pepper, to taste

1 medium onion, diced

3 cloves garlic, minced

1 cup uncooked long-grain rice

4 cups chicken broth (low-sodium recommended)

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika (for a smoky flavor)

1/2 cup frozen peas

1/2 cup grated Parmesan cheese

Fresh parsley, finely chopped, for garnish

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces generously with salt and freshly cracked black pepper. Add the chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

    Using the same skillet, add the diced onion. Sauté for 3-4 minutes until the onion becomes soft and translucent. Stir in the minced garlic and cook for an additional 1 minute, or until fragrant, being careful not to let it burn.

      Add the uncooked rice to the skillet, stirring well to coat the rice with the oil, onion, and garlic mixture. Toast the rice in the skillet for about 2 minutes to enhance its flavor.

        Carefully pour in the chicken broth and heavy cream, then add the dried thyme and smoked paprika. Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for approximately 15 minutes, or until the rice is tender and has absorbed most of the liquid.

          After the rice is cooked, stir in the previously cooked chicken, frozen peas, and grated Parmesan cheese. Mix everything thoroughly and allow it to heat through for about 5 minutes, adjusting the seasoning with additional salt and pepper to taste if needed.

            Remove the skillet from heat. Garnish the dish with a generous sprinkle of freshly chopped parsley before serving. This meal is best enjoyed warm, served straight from the skillet!
