8 oz (225g) penne or fettuccine pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups (150g) sliced cremini or white mushrooms

1 small onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente (typically 8-10 minutes). Before draining, reserve about 1/2 cup of the pasta cooking water. Drain the pasta and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt, pepper, and half of the dried oregano and thyme. Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through. Once cooked, remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the finely chopped onion. Sauté for 2-3 minutes until it becomes translucent and soft. Next, introduce the sliced mushrooms along with the remaining dried oregano and thyme. Continue to sauté for about 5 minutes until the mushrooms are tender and slightly browned. Add the minced garlic and stir for an additional minute, until fragrant.

        Prepare the Sauce: Pour the chicken broth into the skillet, using a wooden spoon to scrape up any browned bits from the bottom. Allow the broth to simmer for 2-3 minutes for the flavors to meld. Lower the heat and stir in the heavy cream and grated Parmesan cheese, mixing continuously until the cheese is completely melted and the sauce is creamy.

          Combine Ingredients: Return the sautéed chicken to the skillet along with the drained pasta. Toss everything together in the creamy sauce until well combined. If the sauce appears too thick, gradually add some of the reserved pasta water until you achieve your desired consistency.
