2 tablespoons olive oil

1 small onion, diced

2 garlic cloves, minced

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized cubes

2 cups broccoli florets (can be fresh or frozen)

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and black pepper to taste

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by preheating your oven to 350°F (175°C). In a large pot, bring salted water to a boil, then add the penne pasta. Cook according to the package directions until al dente. Once cooked, drain the pasta and set it aside in a large mixing bowl.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 3-4 minutes. Incorporate the minced garlic into the skillet and continue cooking for another minute until fragrant.
