1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

8 oz (227g) fettuccine pasta

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package directions until al dente. In the final 3 minutes of cooking, add the broccoli florets to the pot. Once cooked, drain the pasta and broccoli, and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced chicken and season generously with salt, pepper, and Italian seasoning. Sauté the chicken, stirring occasionally, until it is golden brown and fully cooked, approximately 6-8 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic to the leftover oil and sauté for about 1 minute, or until fragrant. Carefully pour in the heavy cream, stirring continuously. Allow the mixture to simmer gently for 2-3 minutes, letting the flavors meld.

        Add Cheese: Gradually whisk in the grated Parmesan cheese, stirring until the sauce becomes smooth and creamy. If the sauce appears too thick, add a splash of chicken broth or a bit of the reserved pasta cooking water until the desired consistency is reached.

          Combine: Return the sautéed chicken and the drained fettuccine with broccoli to the skillet. Gently toss all the ingredients together, ensuring everything is well coated with the creamy Alfredo sauce. Heat through for an additional 2-3 minutes, stirring frequently.
