Ingredients

8 oz fettuccine pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts (about 1 lb), sliced into thin strips

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach (optional for added nutrition)

Fresh parsley, finely chopped (for garnish)

Extra grated Parmesan cheese, for serving

Instructions

Cook the Pasta: Bring a large pot of water to a rolling boil, adding a generous amount of salt. Once boiling, add the fettuccine pasta and cook according to the package directions until al dente (typically around 8-10 minutes). Reserve 1 cup of the starchy pasta water, then drain the pasta and set aside in a large serving bowl.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat until shimmering. Season the sliced chicken breasts with salt and pepper. Carefully place the chicken into the hot skillet and cook for about 5-6 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Use a meat thermometer to ensure it reaches 165°F (74°C). Once cooked, remove the chicken from the skillet and transfer it to a plate, covering to keep warm.

Create the Alfredo Sauce: In the same skillet (without cleaning it), add the minced garlic and sauté for about 30 seconds, or until fragrant—be careful not to let it burn. Lower the heat to medium-low, then slowly pour in the heavy cream while continuously stirring. Let the cream warm and begin to simmer gently but do not let it reach a rolling boil.

Incorporate Cheese and Seasonings: Gradually add the freshly grated Parmesan cheese and Italian seasoning to the cream, stirring well until the cheese has completely melted and the sauce is smooth and creamy. If the sauce becomes too thick for your liking, stir in a bit of the reserved pasta water until it reaches your desired consistency.

Combine Pasta and Chicken: Return the cooked chicken to the skillet with the Alfredo sauce and add the drained fettuccine and fresh spinach (if using). Gently toss all the ingredients together in the skillet until the pasta and chicken are thoroughly coated with the sauce and the spinach has wilted (about 2-3 minutes).

Serve: Transfer the Creamy Chicken Alfredo Pasta to serving plates. Garnish with a sprinkle of chopped fresh parsley and an additional layer of grated Parmesan cheese. Serve immediately while warm for the best experience.
