Ingredients

8 ounces fettuccine pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 medium onion, chopped

1 bell pepper (red or green), diced

1 teaspoon Cajun seasoning (adjust to taste)

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for added heat)

Salt and pepper, to taste

1 cup heavy cream

1 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley, for garnish

Juice of 1 lemon

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the fettuccine pasta and cook according to the package instructions until it's al dente. Once cooked, drain the pasta, reserving about 1/2 cup of the cooking water for later use. Set the pasta aside.

Prepare the Shrimp: In a mixing bowl, season the peeled and deveined shrimp with Cajun seasoning, smoked paprika, salt, and pepper. Heat a large skillet over medium heat and add the olive oil along with 1 tablespoon of the butter. Once the oil is shimmering, add the seasoned shrimp to the skillet. Sauté for about 2-3 minutes, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside on a plate.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of butter. Once melted, add the chopped onion and diced bell pepper. Sauté for about 4-5 minutes, stirring occasionally until the onion becomes translucent. Add in the minced garlic and continue to cook for another minute, or until fragrant.

Make the Sauce: Pour in the chicken or vegetable broth and bring it to a gentle simmer. Allow the broth to reduce slightly for approximately 3 minutes. Next, stir in the heavy cream, grated Parmesan cheese, and lemon juice. Taste the sauce and adjust seasoning with salt and pepper if needed. Let the sauce simmer for an additional 2-3 minutes until it thickens to your liking.

Combine Everything: Return the cooked fettuccine and the sautéed shrimp to the skillet with the sauce. Carefully toss everything together, ensuring that the pasta is well-coated with the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

Garnish and Serve: Remove the skillet from the heat and sprinkle with chopped fresh parsley for a pop of color. Serve the pasta hot, and enjoy your creamy, spicy Cajun shrimp delight!
