2 cups butternut squash, roasted and pureed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup vegetable broth (or chicken broth)

1 cup heavy cream

1 teaspoon dried sage

½ teaspoon ground nutmeg

Salt and pepper, to taste

½ cup grated Parmesan cheese (plus extra for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Roast the Squash:

    - Preheat your oven to 400°F (200°C).

      - Carefully cut the butternut squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a parchment-lined baking sheet. Roast in the preheated oven for 30-40 minutes, or until tender when pierced with a fork. Once cooled enough to handle, scoop out the flesh and blend in a blender or food processor until you achieve a smooth puree.

        Cook the Pasta:

          - Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 9-11 minutes. Drain the pasta and set aside. Reserve a ladle of pasta water in case you need to adjust the sauce later.

            Sauté Aromatics:

              - In a large skillet, heat the olive oil over medium heat.
