Ingredients

12 oz penne pasta

2 cups broccoli florets

1 cup sliced almonds, toasted

2 cups heavy cream

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese

4 cloves garlic, minced

1 medium onion, finely chopped

½ tsp ground nutmeg

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

1 tbsp fresh lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C), ensuring it reaches the desired temperature for even baking.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, typically about 8-10 minutes. Once done, drain the pasta thoroughly and set it aside.

Blanch the Broccoli: In the same pot of boiling water, carefully add the broccoli florets. Cook for 2-3 minutes until they are bright green and tender yet still have a slight crunch. Drain the broccoli and rinse under cold water to halt the cooking process, maintaining their vibrant color.

Prepare the Cream Sauce: In a large skillet over medium heat, warm the olive oil. Add the finely chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-4 minutes. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer. Incorporate the ground nutmeg, salt, and black pepper, mixing well. Allow the sauce to simmer and thicken slightly for about 5 minutes, stirring occasionally.

Combine All Ingredients: In a spacious mixing bowl, combine the drained pasta, blanched broccoli, prepared cream sauce, toasted almonds, and half of the grated Parmesan cheese. Stir thoroughly until all ingredients are evenly coated and well-distributed.

Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it out evenly. Top with the shredded mozzarella cheese and the remaining grated Parmesan cheese, ensuring an even layer for a deliciously cheesy crust.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown on top.

Garnish Creatively: After baking, remove the dish from the oven and allow it to cool for a few minutes. Just before serving, drizzle the pasta bake with fresh lemon juice and sprinkle with chopped parsley for an added layer of freshness.

Serve with Delight: Scoop generous portions into bowls, ensuring everyone enjoys the creamy texture and crunchy almond topping while it's warm. Enjoy your delectable creamy broccoli almondine pasta bake!
