12 jumbo pasta shells

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 can (15 oz) marinara sauce

1 teaspoon Italian seasoning

Salt and black pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for your casserole.

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook them according to the package instructions until they are al dente. Once cooked, drain the shells and set them aside to cool slightly.

      Prepare the Beef Filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes or until the onion becomes soft and translucent. Next, incorporate the ground beef, breaking it apart with a wooden spoon. Cook until browned and fully cooked through. Season the mixture with Italian seasoning, salt, and black pepper. Once done, remove the skillet from the heat.

        Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half (1/2 cup) of the shredded mozzarella, half (1/2 cup) of the shredded cheddar, along with a pinch of salt and black pepper. Stir everything together until well blended.

          Assemble the Casserole: In a 9x13 inch baking dish, spread a layer of marinara sauce evenly across the bottom. Take each cooked pasta shell and generously fill it with the cheese mixture. Afterward, top each filled shell with a spoonful of the beef mixture. Arrange the stuffed shells in the baking dish seam side up.

            Add Sauce and Cheese: Once all shells are packed into the dish, pour the remaining marinara sauce over them evenly. Finish by sprinkling the remaining mozzarella and cheddar cheeses over the top.

              Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden.

                Garnish and Serve: Once baked, remove the casserole from the oven and allow it to cool for a few minutes. Just before serving, sprinkle freshly chopped parsley on top for a pop of color and added flavor.
