12 oz penne pasta

2 ripe avocados, halved and pitted

1 cup heavy cream

4 slices of crispy bacon, crumbled

2 tablespoons olive oil

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

Salt and black pepper, to taste

Fresh basil or parsley, for garnish

Red pepper flakes (optional), for an extra kick

Instructions
 

Cook the Penne: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, which usually takes around 10-12 minutes. Once done, reserve about 1 cup of the cooking water. Drain the pasta and set it aside, keeping it warm.

    Prepare the Avocado Sauce: In a food processor, combine the halved avocados, heavy cream, minced garlic, lemon juice, and a generous pinch of salt and black pepper. Blend the mixture until it is smooth and creamy. If the sauce is overly thick, gradually add some of the reserved pasta water until you achieve your desired consistency.

      Cook the Bacon: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the crumbled bacon. Sauté the bacon until it reaches a crispy and golden-brown perfection, about 5-7 minutes. Once cooked, remove the bacon from the skillet and let it drain on paper towels to remove excess grease.

        Combine Ingredients: In the same skillet where the bacon was cooked, add the drained penne pasta. Pour the creamy avocado sauce over the pasta, and gently toss to ensure the pasta is evenly coated. If the sauce seems too thick, mix in a bit more of the reserved pasta water until it’s creamy and well-combined.
