Ingredients

4 large bell peppers (choose any vibrant color)

1 lb ground turkey

1 cup cooked quinoa

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 cup corn (can be fresh or frozen)

1 cup black beans, rinsed and drained

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

Fresh cilantro or parsley for garnish (optional)

Olive oil for cooking

Instructions

Preheat the Oven: Begin by setting your oven to preheat at 375°F (190°C). This ensures that it’s hot and ready for the peppers once you’re done prepping.

Prepare the Peppers: Carefully slice the tops off the bell peppers, discarding any seeds and ribs inside. Lightly brush the outer surfaces with olive oil and arrange the peppers upright in a baking dish.

Cook the Turkey: In a large skillet over medium heat, drizzle some olive oil. When the skillet is hot, add the finely chopped onion and minced garlic. Sauté them together until the onion turns translucent, which should take about 3-4 minutes. This will enhance the flavors.

Add the Turkey: Incorporate the ground turkey into the skillet. Cook, breaking it apart with a spatula as you stir, until it’s browned and no longer pink, approximately 5-7 minutes.

Flavor the Mix: Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and black pepper. Mix well, allowing the spices to infuse the turkey for another 1-2 minutes. This blooming process deepens the flavor profile.

Combine Ingredients: Next, stir in the cooked quinoa, drained diced tomatoes, corn, and black beans. Gently mix everything together until well combined, ensuring every bite has a taste of the delicious filling.

Stuff the Peppers: Use a spoon to thoroughly fill each prepared pepper with the turkey and quinoa mixture, pressing gently to pack it in tight so that each pepper is generously stuffed.

Bake: Cover the baking dish with aluminum foil and place it into the preheated oven. Bake for 25 minutes. After this, carefully remove the foil and sprinkle the shredded cheese evenly across the tops of each stuffed pepper. Return to the oven for another 10-15 minutes, or until the cheese is bubbly and golden on top.

Serve: Once baked, remove the dish from the oven and allow the peppers to cool for a few minutes. For a fresh touch, garnish with chopped cilantro or parsley before serving.

                    Prep Time: 15 minutes | Total Time: 55 minutes | Servings: 4

                      - Presentation Tips: Arrange the stuffed peppers on a colorful platter. A sprinkle of fresh herbs adds a vibrant touch, and a wedge of lime on the side can elevate the flavors even more. Enjoy your cozy meal!
