Cozy Pumpkin & Sage Lasagna Rolls

9 lasagna noodles

2 cups roasted pumpkin puree (or canned pure pumpkin)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried sage)

2 cups fresh spinach, chopped

2 cups marinara sauce

Salt and pepper, to taste

Olive oil, for drizzling

Pinch of nutmeg (optional)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Once done, drain the noodles and lay them flat on a baking sheet to keep them from sticking together.

    Prepare the Filling: In a large mixing bowl, combine the roasted pumpkin puree, ricotta cheese, half of the shredded mozzarella cheese, the grated Parmesan cheese, egg, chopped sage, and chopped spinach. If using, add a pinch of nutmeg. Season the mixture with salt and pepper to taste. Mix thoroughly until all ingredients are well incorporated.

      Assemble the Rolls: Preheat your oven to 375°F (190°C). Take one lasagna noodle and spread a generous amount of the pumpkin filling evenly along the length of the noodle. Carefully roll it up starting from one end to the other. Repeat this process for all remaining noodles and filling.

        Layer with Sauce: In a 9x13 inch baking dish, start by spreading a thin layer of marinara sauce on the bottom. Place the assembled lasagna rolls seam-side down in the dish. Pour the remaining marinara sauce over the top of the rolls and sprinkle the remainder of the mozzarella cheese on top. Finish with a light drizzle of olive oil.

          Bake: Cover the baking dish tightly with aluminum foil. (For easy removal, you can spray the underside of the foil with cooking spray to prevent sticking.) Bake in the preheated oven for 25 minutes. Afterward, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden brown.

            Serve: Allow the lasagna rolls to cool for a few minutes before serving. For an extra touch, garnish with additional chopped sage or a sprinkle of Parmesan cheese.
