24 oz. frozen cheese ravioli

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup vegetable broth

1/2 cup grated Parmesan cheese, plus more for topping

1 cup fresh spinach, chopped

Salt and pepper to taste

Fresh basil leaves, for garnish

Preheat Oven: Start by preheating your oven to 375°F (190°C) to ensure it is at the right temperature when your dish is ready.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, approximately 3-4 minutes. Next, stir in the minced garlic and diced bell pepper; continue to sauté for another 2-3 minutes until the bell pepper softens slightly.

      Add Tomatoes and Spices: Incorporate the halved cherry tomatoes into the skillet. Sprinkle in the dried basil, oregano, and red pepper flakes (if using). Cook the mixture for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.

        Create Creamy Sauce: Gradually pour in the heavy cream and vegetable broth, stirring continuously to blend. Allow the mixture to simmer for 5 minutes until it thickens slightly. Gently fold in the chopped spinach and season with salt and pepper to taste.

          Combine Ravioli: Carefully mix in the frozen ravioli, ensuring each piece is nicely coated with the creamy sauce.

            Transfer to Baking Dish: Grease a 9x13 inch (or similar size) baking dish and pour the ravioli mixture into it. Evenly sprinkle 1/2 cup of grated Parmesan cheese over the top, adding more cheese if desired for an extra cheesy finish.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown.
