Ingredients

2 ripe avocados, halved and pitted

1 can (5 oz) tuna packed in water, thoroughly drained

1/4 cup Greek yogurt (or mayonnaise for a creamier texture)

1 tablespoon Dijon mustard for a hint of tang

1/4 cup celery, finely diced for crunch

1/4 cup red onion, finely diced for a mild sweetness

1 tablespoon capers, rinsed and finely chopped

1 tablespoon fresh lemon juice for brightness

Salt and freshly cracked black pepper to taste

Fresh dill or parsley, finely chopped, for garnish (optional)

Instructions

Prepare the Avocados: Carefully cut the avocados in half lengthwise. Remove the pit and, to limit browning, lightly sprinkle the cut sides with a bit of lemon juice. This not only preserves the color but adds flavor.

Make the Tuna Salad: In a medium mixing bowl, combine the drained tuna with Greek yogurt (or mayonnaise), Dijon mustard, diced celery, diced red onion, and chopped capers. Add the remaining lemon juice for zest, and mix everything together thoroughly until well blended.

Season the Mixture: Sample the tuna salad and adjust seasoning. Add salt and freshly cracked pepper to your preference. If you enjoy a more tangy flavor, feel free to incorporate additional lemon juice as desired.

Stuff the Avocados: Generously spoon the tuna salad mixture into each avocado half, taking care to pack it in gently so it holds its shape but is overflowing with deliciousness.

Garnish and Serve: For an appealing presentation, sprinkle fresh dill or parsley over the stuffed avocados. Serve immediately for the best flavor experience or refrigerate for up to an hour before enjoying.
