Ingredients

For the Meatloaf:

1 lb ground beef (preferably 80/20 for optimal juiciness)

1 lb ground pork

1 small onion, finely chopped

1 small green bell pepper, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

1/2 cup milk

2 large eggs

1 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

For the Topping:

8 slices provolone cheese (or your cheese of choice)

1/4 cup chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures that your meatloaf bakes evenly.

Sauté the Vegetables: In a medium skillet over medium heat, add a splash of oil. Once hot, add the chopped onion and green bell pepper. Sauté for about 5-7 minutes, or until the vegetables become soft and fragrant. Add the minced garlic and cook for an additional minute, stirring constantly to avoid burning. Remove the skillet from heat and allow the mixture to cool slightly.

Combine Meatloaf Ingredients: In a large mixing bowl, combine the ground beef and ground pork. Add the sautéed onion and pepper mixture to the bowl along with the breadcrumbs, milk, eggs, Worcestershire sauce, salt, black pepper, and smoked paprika. Gently mix the ingredients using your hands or a spatula until just combined—avoid overmixing to keep the meatloaf tender.

Shape the Meatloaf: Transfer the meat mixture into a lightly greased loaf pan, smoothing the top for even cooking. Alternatively, you can shape the mixture into a free-form loaf on a baking sheet lined with parchment paper.

Bake the Meatloaf: Place the loaf in the preheated oven and bake for approximately 50-60 minutes. Use a meat thermometer to check that the internal temperature has reached 160°F (71°C) for safe consumption.

Add the Cheese: Once the meatloaf is cooked through, carefully remove it from the oven. Top the meatloaf evenly with slices of provolone cheese. Return it to the oven and bake for an additional 5-10 minutes, or until the cheese is fully melted and bubbly.

Rest and Serve: After baking, let the meatloaf rest for about 10 minutes before slicing. This step helps the juices redistribute, resulting in a juicy slice. Garnish with chopped fresh parsley for a splash of color and serve with your favorite sides, such as creamy mashed potatoes or a light garden salad.
