Ingredients

1/2 cup unsalted butter

4 oz. semi-sweet chocolate, chopped into small pieces

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 tsp vanilla extract

1/2 cup all-purpose flour

1/4 tsp salt

1/2 cup creamy peanut butter

Optional: Chopped peanuts or sea salt for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Grease four individual ramekins generously with butter. To prevent sticking, dust each ramekin with cocoa powder, tapping out any excess.

Melt the Chocolate and Butter: In a microwave-safe bowl, combine the unsalted butter and chopped semi-sweet chocolate. Heat the mixture in the microwave on medium power in 20-second intervals, stirring well after each interval until the chocolate and butter are fully melted and combined into a smooth mixture.

Mix in Sugar: Gradually add the powdered sugar to the melted chocolate mixture, stirring until fully incorporated and the batter appears glossy.

Add Eggs and Vanilla: Whisk in the eggs and egg yolks one at a time, ensuring each is fully blended before adding the next. Stir in the vanilla extract until the mixture is smooth and well combined.

Incorporate Dry Ingredients: Gently fold in the all-purpose flour and salt with a spatula, mixing until just combined. Be cautious not to overmix; doing so could result in a denser cake.

Prepare the Peanut Butter Filling: In a small bowl, warm the creamy peanut butter in the microwave for about 10-15 seconds until it becomes slightly runny and easier to spoon.

Fill Ramekins: Spoon half of the chocolate batter evenly into the four prepared ramekins. Create a small well in the center of each with the back of a spoon, and fill each well with 1 tablespoon of the warmed peanut butter. Cover the peanut butter filling with the remaining batter, smoothing the tops.

Bake: Arrange the ramekins on a baking sheet for stability and place them in the preheated oven. Bake for 12-14 minutes, or until the edge of each cake is firm while the center remains soft and slightly jiggly.

Cool Slightly: Once baked, remove the ramekins from the oven and let them cool for about 1-2 minutes. Use a small knife to gently run around the edges of each cake to help loosen them.

Serve: Carefully invert each ramekin onto a dessert plate, tapping gently to release the cakes. Dust the tops with powdered sugar if desired, and garnish with chopped peanuts or a sprinkle of sea salt for an extra touch of flavor.

Enjoy: Serve the lava cakes immediately while the centers are still warm and gooey. For an indulgent treat, pair with a scoop of vanilla ice cream on the side!
