Ingredients

For the crust:

1 ½ cups all-purpose flour

1/4 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, cold and cubed

4-6 tablespoons ice water

For the filling:

3 ripe peaches, pitted and thinly sliced (mix with nectarines for added flavor if desired)

2 tablespoons brown sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

Pinch of ground cinnamon

Fresh mint leaves for garnish (optional)

For serving:

Whipped cream or vanilla ice cream (optional)

Instructions

Prepare the crust:

    - In a large mixing bowl, whisk together the flour, salt, and granulated sugar until combined.

      - Cut the cold, cubed butter into the flour mixture using a pastry cutter or your fingertips. Continue mixing until the mixture resembles coarse crumbs with pea-sized pieces of butter.

        - Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough begins to come together. Be careful not to overwork the dough.

          - Shape the dough into a flat disk, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes to firm up.

            Make the filling:

              - In a bowl, combine the thinly sliced peaches, brown sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Gently toss until the peaches are evenly coated. Allow the mixture to sit for about 15 minutes, letting the flavors meld and the juices develop.

                Preheat the oven:

                  - Preheat your oven to 375°F (190°C).

                    Roll out the dough:

                      - On a lightly floured surface, roll out the chilled dough into a rough 12-inch circle, about 1/8 inch thick. Carefully transfer the rolled dough to a parchment-lined baking sheet.

                        Assemble the galette:

                          - Spoon the peach filling into the center of the rolled dough, leaving a 2-inch border around the edge. Fold the edges of the dough over the filling, creating a pleated, rustic edge to encase the fruit while exposing the center.

                            - Brush the crust with a little cold water and sprinkle granulated sugar over the top for an extra touch of sweetness and sparkle.

                              Bake:

                                - Place the galette in the preheated oven and bake for 30-35 minutes, or until the crust is beautifully golden brown and the peaches are tender and bubbly.

                                  Chill:

                                    - Once baked, allow the galette to cool at room temperature. For a refreshing dessert, place it in the refrigerator for at least 1 hour to chill, allowing the flavors to intensify.

                                      Serve:

                                        - Slice the chilled galette into wedges and serve with a generous dollop of whipped cream or a scoop of vanilla ice cream. Garnish with fresh mint leaves for a pop of color and flavor, if desired.
