Chili Lime Tofu Rice Paper Rolls

1 block of firm tofu, pressed and cut into cubes

2 tablespoons soy sauce

1 tablespoon chili paste (adjust according to your spice preference)

2 tablespoons fresh lime juice

1 tablespoon sesame oil

1 ripe avocado, sliced

1 medium cucumber, julienned

1 red bell pepper, thinly sliced

1 cup carrots, grated

1 cup fresh cilantro leaves

1 package of rice paper wrappers

Peanut dipping sauce (for serving)

Optional: sliced jalapeƱos for an extra kick

Marinate the Tofu: In a mixing bowl, combine soy sauce, chili paste, lime juice, and sesame oil. Add the cubed tofu and gently toss to coat all pieces evenly. Cover the bowl and let the tofu marinate for a minimum of 20 minutes while you prepare the other ingredients.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Add the marinated tofu cubes to the skillet, spreading them out in a single layer. Cook for approximately 5-7 minutes, turning occasionally, until the tofu is golden brown and has developed a slight crispiness on all sides. Remove the skillet from heat and set the tofu aside to cool slightly.

      Prepare the Vegetables: Get your rice paper rolling station ready. Arrange the sliced avocado, julienned cucumber, sliced red bell pepper, grated carrots, and fresh cilantro leaves in an easily accessible area.

        Soften the Rice Paper: Fill a large shallow dish with warm water. Submerge one rice paper wrapper into the water, allowing it to soak for about 10-15 seconds until it becomes soft and pliable. Carefully lift the wrapper out of the water and lay it flat on a clean, damp kitchen towel or cutting board.

          Fill the Wrapper: On the lower third of the softened rice paper, place a few cubes of the marinated tofu, followed by slices of avocado, cucumber, red bell pepper, grated carrots, and a handful of cilantro leaves. For those who like extra heat, feel free to add a few slices of jalapeƱos.

            Roll the Wrapper: Gently fold the sides of the rice paper over the filling, then carefully roll it up tightly from the bottom, making sure to enclose the filling completely. Repeat this process with the remaining wrappers and ingredients until everything is used up.
