Chili Garlic Grilled Tofu Skewers

14 oz (400g) firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons chili garlic sauce

1 tablespoon maple syrup or agave nectar

1 teaspoon rice vinegar

1 red bell pepper, cut into 1-inch pieces

1 medium zucchini, sliced into thick rounds

½ cup cherry tomatoes

Salt and pepper, to taste

Fresh cilantro, for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before use)

Prepare the Tofu: Begin by cutting your pressed tofu into uniform 1-inch cubes. This size allows for quicker marinating and even grilling, maximizing flavor absorption.

    Make the Marinade: In a medium mixing bowl, whisk together the soy sauce, sesame oil, chili garlic sauce, maple syrup (or agave nectar), and rice vinegar until the mixture is well combined and smooth.

      Marinate the Tofu: Carefully place the tofu cubes in the marinade, ensuring that each piece is well-coated. Let the tofu marinate for at least 30 minutes. For the best flavor, cover and refrigerate it while marinating.

        Prep the Vegetables: As the tofu marinates, prepare your vegetables. Cut the red bell pepper into 1-inch pieces and slice the zucchini into thick rounds. This helps them cook evenly on the skewers alongside the tofu.

          Assemble the Skewers: Take a skewer and thread on a piece of marinated tofu, followed by a piece of red bell pepper, a slice of zucchini, and a cherry tomato. Repeat this pattern, filling the skewer but leaving a small space at both ends for easy handling.
