Ingredients

2 cups cooked chicken, shredded (preferably seasoned with chili spices)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 medium red bell pepper, diced

1 small green bell pepper, diced

1 small onion, finely chopped

4 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon ground cumin

Salt and freshly ground pepper to taste

4 large tortillas (flour or whole wheat)

Fresh cilantro, chopped, for garnish (optional)

Salsa, for serving (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's heated when you're ready to bake.

Sauté Vegetables: In a large skillet, heat a splash of cooking oil over medium heat. Add the finely chopped onion, diced red bell pepper, and green bell pepper. Sauté for about 5-7 minutes, stirring occasionally, until all vegetables are softened. Season with salt and pepper to enhance the flavor.

Combine Ingredients: In a spacious mixing bowl, combine the shredded chicken, black beans, corn, and the sautéed vegetable mixture. Sprinkle in the garlic powder, chili powder, and cumin, then stir everything together until well mixed.

Prepare Egg Mixture: In a separate bowl, vigorously whisk together the eggs, milk, and a pinch of salt and pepper until the mixture is smooth and frothy.

Assemble Burritos: Take one tortilla and lay it flat on a clean surface or cutting board. Scoop approximately 1/4 of the chicken mixture into the center of the tortilla, and then sprinkle a portion of the shredded cheddar cheese on top. Fold in the sides of the tortilla and roll it up tightly from the bottom to encapsulate the filling.

Bake: Arrange the assembled burritos seam-side down in a greased baking dish. Once all the burritos are arranged, pour the egg mixture evenly over the top, ensuring it seeps into the burritos. Top with the remaining cheddar cheese and cover the dish with aluminum foil.

Bake: Place the baking dish in the preheated oven and bake for 25 minutes while covered. After that time, carefully remove the foil and bake for an additional 10-15 minutes, or until the egg has fully set and the cheese is melted, bubbly, and lightly golden.

Serve: Allow the burrito bakes to rest for about 5 minutes before slicing. Optionally, garnish with fresh chopped cilantro and serve with a side of salsa for added flavor.

                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4

                    - Presentation Tips: Serve individual slices on a colorful plate, and drizzle some extra salsa over the top with a sprinkle of cilantro for a pop of color.
