Ingredients

2 large sweet potatoes, cut into fry-shaped pieces

2 tablespoons extra-virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 cup canned kidney beans, rinsed and drained thoroughly

1 cup canned diced tomatoes, including their juice

1 tablespoon ground chili powder

1 teaspoon ground cumin

1/2 teaspoon crushed red pepper flakes (optional for extra heat)

1 cup shredded cheddar cheese (or vegan cheese for a dairy-free option)

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (optional, for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it reaches the right temperature for cooking the fries.

Prepare the Sweet Potato Fries: In a large mixing bowl, toss the sweet potato fries evenly with the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Make sure each fry is generously coated. Line a baking sheet with parchment paper and arrange the fries in a single layer for even baking.

Bake the Fries: Place the baking sheet in the preheated oven and bake the fries for 25-30 minutes. Remember to flip them halfway through the cooking time to achieve an even golden brown and crispy texture.

Cook the Chili Mixture: While the fries are baking, heat a medium saucepan over medium heat. Add the rinsed kidney beans, diced tomatoes, chili powder, cumin, and optional crushed red pepper flakes. Stir the mixture well and let it simmer for about 10-15 minutes, allowing the flavors to meld beautifully. Once done, remove from heat and set aside.

Top the Fries with Cheese: After baking, remove the fries from the oven and immediately sprinkle the shredded cheese over the hot fries, allowing it to melt. Return the baking sheet to the oven for an additional 3-5 minutes, or until the cheese is perfectly melted and bubbly.

Serve: Carefully remove the baking sheet from the oven. Drizzle the warm chili mixture generously over the cheesy fries. Finish by garnishing with freshly chopped cilantro. Serve with a dollop of sour cream or Greek yogurt on the side, if desired.
