4 slices of thick bread (sourdough or whole grain suggested)

4 large eggs

1 cup shredded sharp cheddar cheese

1 cup prepared chili (homemade or canned)

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

2 green onions, finely chopped (for garnish)

Fresh cilantro leaves, for garnish

Cooking spray or melted butter, for greasing

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Prepare the Bread: Use a rolling pin to gently flatten each slice of bread. Next, cut out a circle from the center of each slice with a glass or cookie cutter that’s slightly smaller than the bread itself, creating a cup-like shape.

      Grease the Muffin Tin: Lightly coat a muffin tin with cooking spray or brush with melted butter to prevent the bread from sticking during baking.

        Form the Toast Cups: Press each piece of flattened bread into the individual muffin tin slots, shaping them into cups that will hold the filling securely.

          Whisk the Eggs: In a mixing bowl, crack the eggs and whisk them vigorously until the mixture is uniform. Incorporate the ground cumin, smoked paprika, and a pinch of salt and black pepper, stirring until evenly blended.

            Layer with Chili and Cheese: Spoon a modest amount of prepared chili into the bottom of each toast cup, just enough to create a base layer. Carefully pour the whisked eggs over the chili, filling each cup about three-quarters full. Top generously with shredded cheddar cheese to enhance the flavor.

              Bake: Transfer the muffin tin to the preheated oven and bake for approximately 15-20 minutes, or until the egg is fully set and the cheese is melted and bubbly, creating a golden crust.
