Ingredients

2 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1 cup marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (plus extra for garnishing)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

Olive oil (for frying)

Cooked spaghetti or mixed green salad (for serving)

Instructions

Prepare the Chicken: Begin by preheating your oven to 400°F (200°C). To ensure even cooking, place each chicken breast between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken until it reaches a uniform thickness of about ½ inch.

Coat the Chicken: Set up a dredging station to make the coating process easier. In one shallow dish, add the flour. In a second dish, whisk the eggs until smooth. In a third dish, combine the breadcrumbs, garlic powder, onion powder, salt, and black pepper. Dredge each chicken breast in the flour, making sure to shake off any excess, then dip into the egg mixture, followed by the breadcrumb mixture, ensuring each breast is thoroughly coated.

Fry the Chicken: In a large skillet, heat about ¼ inch of olive oil over medium heat. When the oil is shimmering, carefully add the breaded chicken breasts in batches, taking care not to overcrowd the pan. Fry for approximately 4-5 minutes on each side, or until the chicken is golden brown and fully cooked. Once done, transfer them to a plate lined with paper towels to drain any excess oil.

Assemble the Dish: In a baking dish, spread a thin layer of marinara sauce across the bottom. Place the fried chicken breasts on top of this layer. Generously spoon additional marinara sauce over each chicken breast, followed by an even sprinkle of shredded mozzarella and grated Parmesan cheese.

Bake: Place the assembled baking dish in the preheated oven and bake for around 20 minutes, or until the cheese is bubbly and has developed a light golden color.

Serve: Once baked, remove the dish from the oven and allow it to cool slightly. Garnish liberally with the fresh chopped basil. Serve hot alongside a bed of cooked spaghetti or a refreshing mixed green salad for a complete meal.
