Ingredients

8 oz elbow macaroni

2 cups cooked rotisserie chicken, shredded

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup onion, finely chopped

2 cups whole milk

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

2 tablespoons Dijon mustard

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Once done, drain the pasta and set it aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes, stirring frequently, until the onion becomes translucent and the garlic releases its fragrant aroma.

Prepare the Sauce: Gradually pour in the whole milk and heavy cream into the skillet with the sautéed onions and garlic. Stir the mixture well and bring it to a gentle simmer, making sure it doesn’t boil.

Incorporate the Cheese: Reduce the heat to low, then slowly whisk in the sharp cheddar, mozzarella, and Parmesan cheeses. Continue stirring until all the cheeses melt completely and the sauce becomes creamy. Next, add the Dijon mustard, paprika, garlic powder, onion powder, salt, and pepper. Mix until all the ingredients are fully combined and the sauce is smooth.

Combine Chicken and Pasta: Gently fold in the shredded rotisserie chicken and cooked macaroni into the cheese sauce. Stir carefully until the pasta and chicken are thoroughly coated with the rich and creamy cheese sauce.

Bake (Optional): For an extra delicious crispy top, transfer the mac and cheese mixture into a greased baking dish. Sprinkle additional cheese over the top. Place the baking dish in a preheated oven at 350°F (175°C) and bake for 20-25 minutes, or until the cheese on top is golden and bubbly.

Garnish: Once baked, remove the dish from the oven and allow it to sit for a few minutes. Sprinkle fresh chopped parsley on top to add a pop of color and freshness before serving.

Serve: Dish out generous portions of the creamy chicken mac and cheese while it's still warm. Relish in your delightful comfort food creation!
