12 ounces spaghetti or fettuccine

2 cups cherry tomatoes, halved

2 cloves garlic, minced

1/4 cup extra-virgin olive oil, plus extra for drizzling

1 teaspoon red pepper flakes (adjust to taste for spiciness)

Salt, to taste

Freshly cracked black pepper, to taste

1 cup fresh basil leaves, torn into pieces

8 ounces burrata cheese

Zest of 1 lemon

Freshly grated Parmesan cheese, for garnish

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti or fettuccine and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water to adjust the sauce's consistency later. Once done, drain the pasta and set aside.

    Sauté Cherry Tomatoes: In a large skillet, heat the extra-virgin olive oil over medium heat. Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute or until the garlic is fragrant, being careful not to let it burn. Next, add the halved cherry tomatoes and cook for 5-7 minutes, stirring occasionally. You want the tomatoes to soften and start bursting, releasing their sweet juices.

      Combine Pasta and Sauce: Gently transfer the drained pasta into the skillet with the sautéed cherry tomatoes. Toss everything together, adding the reserved pasta water a few tablespoons at a time until you achieve the desired creamy consistency. Taste and season with salt and freshly cracked black pepper as needed.
