Cheesy Zucchini Casserole

4 medium zucchinis, thinly sliced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 large egg, beaten

1/2 cup grated Parmesan cheese

1 cup whole wheat breadcrumbs

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray to prevent sticking.

    Sauté the Vegetables: In a large skillet set over medium heat, warm the 2 tablespoons of olive oil. Add the finely chopped onion and minced garlic, sautéing for about 3-4 minutes until they are fragrant and the onion becomes translucent. Stir in the sliced zucchinis, cooking them until they soften, which should take about 5-7 minutes. Season the mixture with salt, pepper, and dried Italian herbs. Once done, remove the skillet from heat and allow the mixture to cool slightly.

      Combine the Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, the beaten egg, and half of both the cheddar and mozzarella cheeses. Stir until the mixture is creamy and well-combined. Add in the cooled zucchini and onion mixture, ensuring that the zucchini is evenly distributed throughout.

        Layer the Casserole: Spread half of the zucchini and cheese mixture evenly across the bottom of the prepared baking dish. Sprinkle half of the grated Parmesan cheese over this first layer. Add the remaining zucchini mixture as the next layer, followed by the rest of the cheddar and mozzarella cheeses. Top off your casserole with the remaining Parmesan cheese and breadcrumbs for a delightful crunchy crust.

          Bake the Casserole: Cover the dish with aluminum foil to retain moisture and prevent over-browning. Bake in your preheated oven for 25 minutes. After this time, remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and bubbly.
