4 medium zucchinis, spiralized into zoodles

1 lb ground beef or turkey

1 small onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

2 cups shredded cheddar cheese (divided)

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup chopped fresh cilantro, for garnish

Salt and pepper, to taste

Cooking spray or olive oil for greasing

Preheat the oven: Set your oven to 375°F (190°C). Grease a 9x13 inch casserole dish with cooking spray or a light drizzle of olive oil to prevent sticking.

    Cook the meat: In a large skillet over medium heat, add a splash of olive oil. Once the oil is hot, add the diced onion and sauté for about 3-4 minutes, or until the onion becomes translucent. Incorporate the minced garlic and the ground beef or turkey, using a spatula to break the meat apart. Cook until the meat is browned and cooked through, about 5-7 minutes.

      Add seasoning: Mix in the taco seasoning, black beans, diced tomatoes, and corn. Stir well to combine, and allow the mixture to simmer for about 5 minutes. Adjust seasoning with salt and pepper to your liking.

        Prepare the zoodles: While the meat mixture is simmering, spiralize the zucchinis to create zoodles. Place the zoodles in the bottom of the greased casserole dish. They can overlap slightly, as they will cook down.

          Layer the casserole: Evenly distribute the seasoned meat mixture over the zoodles, ensuring it covers them well. In a separate bowl, mix 1 cup of shredded cheddar cheese with Monterey Jack cheese. Sprinkle half of this cheese mixture over the meat layer.

            Add sour cream: Spoon dollops of sour cream over the cheese layer, then gently spread it out using the back of a spoon for an even coverage.

              Top with cheese: Add the remaining meat mixture on top, creating an even layer. Finally, sprinkle the remaining cheddar cheese over the casserole for a cheesy finish.

                Bake: Cover the casserole with aluminum foil to prevent over-browning, and place it in the preheated oven. Bake for 25 minutes. After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
