1 small onion, finely chopped

2 cloves garlic, minced

1 packet (about 1 oz) taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (optional)

1 cup salsa

2 cups tortilla chips, crushed

2 cups shredded cheese (choose cheddar, Monterey Jack, or a blend)

1 cup sour cream

1/2 cup green onions, sliced (for garnish)

Fresh cilantro, roughly chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) along with the finely chopped onion. Cook until the meat is browned and the onion becomes soft and translucent, about 5-7 minutes. In the last minute of cooking, add the minced garlic and stir until fragrant.

      Season the Mixture: Once the meat is cooked, stir in the taco seasoning along with the black beans, corn, diced tomatoes (if using), and salsa. Mix everything thoroughly and let it simmer for about 3-5 minutes, allowing the flavors to blend together beautifully.

        Assemble the Casserole: Grease a 9x13 inch baking dish with cooking spray or butter. Begin by layering half of the crushed tortilla chips at the bottom. Next, pour half of the meat mixture over the chips, spreading it evenly. Follow with half of the shredded cheese.
