1 medium head of cauliflower, cut into bite-sized florets

1 medium head of broccoli, cut into bite-sized florets

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 cup heavy cream

1 cup whole milk

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon mustard powder

½ teaspoon smoked paprika

Salt and pepper, to taste

½ cup panko breadcrumbs (optional, for crispy topping)

Fresh parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or a light coat of cooking spray to prevent sticking.

    Prepare the Vegetables: Bring a large pot of salted water to a boil. Carefully add the cauliflower and broccoli florets and blanch them for about 3-4 minutes, just until they are slightly tender yet still crisp. Drain the vegetables and immediately transfer them to a bowl of ice water to halt the cooking process. Once cooled, drain and set aside.

      Make the Cheese Sauce: In a medium saucepan over medium heat, melt the 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute, or until it becomes aromatic.
